**Dal Fry** is a popular Indian dish made from lentils cooked with spices and herbs. Here’s how you can make it:

Ingredients:
– **Lentils (Dal):**
– 1 cup Toor dal (pigeon peas) or a mix of Toor dal and Moong dal
– **For Boiling the Dal:**
– 2 cups water
– 1/4 teaspoon turmeric powder
– Salt to taste
– **For the Tempering (Tadka):**
– 2 tablespoons ghee or oil
– 1 teaspoon cumin seeds

– 1 medium onion, finely chopped
– 2-3 garlic cloves, finely chopped
– 1-inch piece ginger, finely chopped or grated
– 1-2 green chilies, slit or chopped
– 1 large tomato, finely chopped
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1/2 teaspoon garam masala powder
– 1/2 teaspoon coriander powder

A pinch of asafoetida (hing)

– **For Garnishing:**
– Fresh coriander leaves, chopped
– Lemon wedges

Instructions:

1. **Cook the Dal:**
– Wash the dal thoroughly and soak it for about 15-20 minutes.
– Drain the water and add the dal to a pressure cooker with 2 cups of water, turmeric powder, and salt.
– Pressure cook for 3-4 whistles on medium heat until the dal is soft and fully cooked.
– Once done, mash the dal lightly and set it aside.

2. **Prepare the Tempering (Tadka):**
– Heat ghee or oil in a pan on medium heat.
– Add cumin seeds , Let them splutter.
– Add a pinch of asafoetida  , Sauté for a few seconds.
– Add chopped onions and sauté until they turn golden brown.
– Add chopped garlic, ginger, and green chilies. Sauté until the raw smell disappears.
– Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.
– Add turmeric powder, red chili powder, coriander powder, and garam masala powder. Mix well.

3. **Combine Dal and Tempering:**
– Pour the cooked dal into the pan with the tempering. Mix well.
– Add water as needed to achieve the desired consistency.
– Bring it to a boil, then let it simmer for 5-7 minutes to allow the flavors to blend.
– Adjust salt and spices if necessary.

4. **Garnish and Serve:**
– Garnish with chopped coriander leaves.
– Serve hot with rice, roti, or naan. You can also squeeze a lemon wedge over the dal before serving for a tangy flavor.
