Shree Khand is a popular Indian dessert made from strained yogurt (hung curd), flavored with cardamom and saffron. Here’s a simple recipe to make it at home:
Ingredients:
2 cups hung curd (strained yogurt)
1/2 cup powdered sugar (adjust to taste)
1/4 tsp cardamom powder
A few strands of saffron (soaked in 2 tbsp warm milk)
2 tbsp chopped nuts (almonds, pistachios)
1 tsp rose water or kewra water (optional)
Instructions:
1. Prepare Hung Curd:
Take plain yogurt and place it in a muslin cloth. Tie it up and hang it for 4-5 hours or overnight in the refrigerator to remove all the excess water.
2. Mix Yogurt & Sugar:
Transfer the thick, strained yogurt (hung curd) into a bowl. Add powdered sugar and mix well until smooth and creamy.
3. Flavoring:
Add cardamom powder, saffron milk, and rose water (if using) to the yogurt mixture. Stir until well combined.
4. Add Nuts:
Fold in the chopped nuts (almonds and pistachios).
5. Chill and Serve:
Refrigerate the Shree Khand for at least 2 hours before serving. Garnish with more nuts or saffron strands before serving.
